

Ingredients:
Wet ingredients
- 2 bananas – 140 gms
- 4 dates, pitted
- 2 tbsp olive oil
- 2 tbsp honey
Dry ingredients
- 1 cup grated carrot
- 1 cup old fashioned oats
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 2-3 tbsp milk (only if the batter is too thick)
- 2-3 tbsp raisins
- 2-3 tbsp chopped walnut
Method:

Preheat the oven to 350 degrees in convection mode

Mix wet ingredients in a blender until smooth

Add dry ingredients and blend again. Add 2-3 tbsp milk only if the batter is too thick. Batter should be thick enough to spoon out rather than pour out
- Gently mix in the raisins

Line baking cups with parchment paper

Spoon the batter into the cups, level the batter and top with chopped walnuts

Bake for about 30-35 minutes. Baking time depends on the oven, type of baking cups and such factors
